Method
- Combine the flour, salt and pepper in a shallow bowl.
- Dredge the chicken breasts in the flour to coat completely. Reserve the leftover flour.
- Warm 1 tablespoon of the olive oil in a large skillet over medium heat.
- Add the chicken and brown on one side, about 5 minutes.
- Add the remaining oil, turn the chicken, and brown well on the other side, about 5 minutes longer.
- Transfer the chicken to a plate and set aside.
- Add the butter to the skillet. When it melts, add the onions and cook, stirring, until softened, about 2 to 3 minutes.
- Stir in the reserved seasoned flour and cook, stirring, until completely incorporated, about 1 minute.
- Add the broth, 3 tablespoons lemon juice and the thyme.
- Bring to a boil, stirring constantly.
- Return the chicken to the skillet, reduce the heat to low, cover, and cook until the chicken is tender, about 30 minutes.
Good to know
- The original steps don't say where the parsley goes; sprinkling it over the finished dish is a common choice.
